Ingredients
2 lbs of sliced yellow onions, 4 tbsp of unsalted butter, 2 tbsp of olive oil, Salt and pepper to taste, 1 tsp of sugar,
1/4 cup of dry white wine, 6 cups of beef broth, 2 bay leaves, 6-8 slices of baguette bread, 2 cups of shredded Gruyere cheese
Instructions
In a large pot, heat the butter and oil over medium heat. Add the onions, salt, pepper, and sugar and stir to combine.
Cook the onions, stirring occasionally, until they are soft and golden brown, about 30-40 minutes.Add the wine to the pot and let it cook until it has reduced, about 5 minutes.
Stir in the beef broth and bay leaves and let the soup simmer for 10-15 minutes. Preheat the oven to 375°F.
Place the bread slices on a baking sheet and bake for about 5-7 minutes, or until lightly toasted. Divide the shredded Gruyere cheese evenly among the bread slices.
